Building on our repertoire of wild stouts we have combined our love of locally foraged fruits with our penchant for sweet dark beers. The combination of fruit and chocolate is always amazing and what better way to combat the cold nights of the changing seasons than with a rich warming stout?

Finzels is a collaboration with Left Handed Giant.
It’s a soft, juicy NEIPA, that’s been liberally hopped with El Dorado and Idaho 7.
Fermented with mango, apricot and peach puree, before being blended with a signature Gipsy Hill sour base beer and topped off with milk sugar to bind together all the flavours.
It’s big bodied, fruity, slightly sour, low bitterness, hop forward and 7.5%. A adult sorbet in a glass.
Goes well with nights in, nights out, and big pizza.

A Pale Ale, Stick a Finger in the Soil is fresh, hoppy and smooth at 4.6% ABV. Color is golden with a white head. Aroma is bursting with tropical fruits and sweet orange that finely balances the mild caramel malt notes. The palate is filled with lightly bitter grapefruit, orange peel and ripe peach notes from the hops followed by herbs and a soft spice in the background. Light body with medium carbonation. Finishes dry and slightly bitter with a malty backbone. The refreshing Pale Ale is great for a day in the sun.

Saison brewed with honey, coriander & lemon verbena. Fermented with a mixed culture of classic saison strains, wild yeast, & bacteria. Post fermentation, the beer was conditioned in stainless steel for 6 weeks with its primary mixed culture. A third & final fermentation completed this beer in the bottle. Pockets of Sunlight is a radiant saison full of crisp energy.

The Watchers - Coffee and cherry double stout 10.1%
Super complex stout brewed with 10 different malts and hopped with Challenger and Bramling Cross. Fermented with a custom made blend of rustic and ester heavy strains of yeast. Re-toasted oak and added in during fermentation and then aged on 140kg of Morello cherries and freshly roasted Brazilian Bela Época peabean coffee coldbrew, courtesy of Faodail Roastery. Pretty insaney.

Barrel aged bretted cherry saison. Farmhouse saison aged on a sweet and sour variety cherries. This was then aged in Pinot Noir and Sauvignon Blanc barrels on a 4 year old brett blend developed in-house.

The people of Tampa Bay have fallen prey to Pirate invasion every year for well over 100 years. After more than a century of failing to repel these seafaring raiders in their anachronistic wooden ships, despite access to modern sea, land and air arsenals that ostensibly should make short work of wind powered vessels equipped with naught but cast iron cannons and raging scurvy, it occurred to the folks of Cigar City Brewing that if you can’t beat them start saying Arrrr Matey! And so we have brewed Invasion Pale Ale, a citrusy and tropical session beer brewed for those long days of marauding, pillaging and pirating. Cheers!
Brouwerij 3 Fonteinen - 3 Fonteinen Oude Geuze Cuvée Armand & Gaston is a blend of one-, two-, and three-year old traditional lambics, all brewed at Brouwerij 3 Fonteinen. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions, etc. This cuvée, like all of our lambic, is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it. This geuze has fermented in the bottle and will continue to develop its tastes and aromas over its long life when properly cellared. Our latest foray into alcohol free beers sees us take our iconic Lost Lager and turn it into a crisp and refreshing 0.5% crusher.
The light Pilsner malt base is the perfect foundation, offering up a delicate backbone that gives the hops a stage to shine. The final result is a light lager with zingy citrus and herbal notes, coupled with savoury biscuit malts. All the flavour, none of the alcohol.

Cloud Cuckoo is a collaboration beer with BFM from Switzerland.
This beer is the product of over a year’s worth of work, and the perfect representation of both breweries. A blend of sour ale from BFM and a blend of sour ale from OverWorks. Defined by the darker malts and time spent in oak, this beer is a nutty, biscuty malt-forward twist on the Oud Bruin style. Expect plenty of vineous and woody notes with a splicing sour that chops through the sweet malts.

Chaos theory is the most under-rated achievement of 20th century science. This beer can only aspire to be parallel to the mathematical use of the word chaos which is at odds to the common parlance.
The universe’s tendency to play and the resulting inherent randomness means each initial starting point is arbitrarily closely approximated by other points with significantly different trajectories and outcomes. At BrewDog we live, breathe and die the tiny initial factors. Every single aspect of our beer means the world to us.

BrewDog vs Cloudwater is a 6.8% Vermont-style India Pale Ale, hopped with Mosaic in the whirlpool only. Without any big-hitting additions of hops in the boil, we carried the flavour by heavily dry-hopping the brew with Citra and Mosaic. Topping out at around 35IBU, we also used oats in the recipe to deliver the trademark smooth mouthfeel – and made it truly authentic by propagating a one-off culture of Vermont yeast, specifically for the brew.

At OverWorks , we’ve taken a BrewDog classic and given it a funky twist.
Albino Sour Assassin is Scottish red ale featuring a hefty dose of Rye malts for added spice. Fermented with our house strain and aged in bourbon barrels, the final result is a ruby red sour ale with a complex malt backbone, dank hops and aromas of chewy bourbon.

We’ve created something a little bit out of the ordinary for our Hawkes collaboration.
This farmhouse cider starts life with a simple malt foundation followed by the addition of apple juice and our own house yeast blend.
Following fermentation, the liquid spends time in both cognac and bourbon barrels which bring about a rich and complex ageing process that weaves in characteristics from both casks.
BrewDog USA - Columbus and Copenhagen twin for a wonderful milk stout. A transatlantic road trip, uniting the States and the Kingdom. Buckle up for a bitter sweet ride. Darker than Evil and smoother than a late show host. Chocolate, bitter espresso, and vanilla ride up front, closely tailgated by roasty, nutty notes. Oats and wheat round things out with nitro delivering a supersonic smooth ride. Roaster Coaster - fantastic transatlantic.

This beer is now focussed on getting all that is good about BrewDog into a practically alcohol free format. It is a West Coast inspired pale ale with a difference! The beer has 45 IBUS and is brewed with centennial, amarillo, columbus, cascade and simcoe and intensively dry-hopped with centennial and amarillo. The backbone is provided by 8 different types of speciality malts with only 87 kilos of malt used in a 20HL batch (our Punk IPA uses 450 kilos in 20HL).

Taking select Rioja and Vinsanto barrels for a delicate and tannic base. Refermented with Hibiscus and Lime zest for floral and citrus aromas and an amazing scarlet hue. Fermentation flavours keep the delicate beer funky and complex through to a bone dry finish.

BrewDog Pale ale is a classic west coast pale ale, paying tribute to the beers like Sierra Nevada Pale Ale which inspired us to start up our brewery, albeit at a slightly more sessionable ABV. BrewDog Pale Ale focusses on a very heavy hop dosing in the whirlpool which gives a slightly different hop impact than a heavily dry-hopped beer with the hop character slightly more subtle on the nose but deeper intertwined into the light and malty backbone of the new beer.
